Figured it out. In case anyone runs into this issue, and is running laravel-echo-server as a docker container, (like the one that comes with laradock) you either need to hook into it somehow, or run laravel-echo-server from workspace. That way you'll see any error messages that normally wouldn't show up in your app's log files.
