Your project should not be affected by the array of OS of user base. Its just the host (server) you need to care about.

If your client's server is windows and you would like to deploy on it, try homestead (if possible).

I run laravel on a windows box at work for an office application I wrote to connect to our Pervasive database via ODBC. Works perfectly fine on windows as well. I didn't need to do anything special. Used XAMPP to setup my stack.
